Chicken Walnut Summer Salad
Feeds: up to 6-8 people

Cook time: 30 minutes
You can use the chicken walnut salad in two ways. As a sandwich on a croissant, or serve on a bed of field greens.
Chicken Walnut Summer Salad Ingredients
- 2 whole skinless chicken breast
- 2 stalks of celery (finely chopped)
- 1/4 cup onion (finely chopped)
- 1 small bunch of red grapes (sliced in half)
- 1 cup mayonaise
- 8 tbsp. whipped cream
- 1 tsp. white pepper
Directions
- Boil chicken breast in chicken broth and water until cooked, about 30 minutes
- Remove from heat, let cool, and dice into 1/4″ cubes
- Add all ingredients into a bowl and stir lightly
- Serve on field greens as a salad or croissant for a sandwich
